Salers
Member of Les Plus Beaux Villages de France
This small town gave its name to a breed of cattle and to an AOC cheese, and it is still surrounded by grassland. It grew up around a castle on a basalt plateau about 900 metres up, above the Maronne valley on the western edge of the Cantal volcanoes. Renaissance houses in the Haute-Auvergne style frame its squares, and two gates survive from the medieval walls.
